Orange Chocolate Cheesecake

A baked cheesecake flavored with grated orange rind and orange juice and swirled with melted unsweetened chocolate, set in a spiced graham cracker crust.

Directions

  1. CRUST: Combine crumbs, sugar and spices, cut in butter until completly blended, Press mixture on bottom and sides of pan. Chill.
  2. CHEESECAKE: Melt chocolate. Meanwhile blend cream cheese and sugar until creamy and light. Add egg yolks one at a time, beating well after each addition, stir in vanilla,. orange peel and juice. Beat egg whites until stiff, spoon onto cheese mixture. Whip cream,fold with egg whites into cheese mixture until well blended. Spoon 1/3 of filling into crumb lined pan, trickle a little melted chocolate over surface swirl lightly. Repeat twice. Bake in very slow oven 300 degrees 1 hour. turn heat off, leave cake in oven with door closed 1 hour longer. Remove from oven, cool at room temperature, then chill.
  1. Make the crust: Combine the graham cracker crumbs, sugar, cinnamon, and nutmeg. Cut in the butter until completely blended.
  2. Press the mixture onto the bottom and sides of the pan. Chill.
  3. Make the cheesecake: Melt the chocolate. Meanwhile, blend the cream cheese and sugar until creamy and light.
  4. Add the egg yolks one at a time, beating well after each addition. Stir in the vanilla, grated orange rind, and orange juice.
  5. Beat the egg whites until stiff, then spoon them onto the cheese mixture.
  6. Whip the cream, then fold the whipped cream and egg whites into the cheese mixture until well blended.
  7. Spoon 1/3 of the filling into the crumb-lined pan, trickle a little melted chocolate over the surface, and swirl lightly. Repeat this twice more with the remaining filling and chocolate.
  8. Bake in a very slow oven at 300 degrees for 1 hour. Turn the heat off and leave the cake in the oven with the door closed for 1 hour longer.
  9. Remove from the oven, cool at room temperature, then chill.
