Cream Cheese Party Cupcakes

Mini cheesecake-style cupcakes: a cream cheese, sugar, and egg batter baked in paper liners, then topped with a sweetened sour cream mixture and strawberry preserves.
Directions
- Beat cream cheese in large bowl until soft and creamy, gradually add sugar until light and fluffy, add eggs one at a time. Beat well after each egg. Add 1 1/2 tsp vanilla. Spoon mixture into paper cupcakes 3/4 full. Bake at 300 degrees for 30 minutes.
- Combine sour cream with sugar and vanilla stirring well. Spoon 1/4 tsp sour cream mixture on each cupcake, add strawberry jam, cook 5 minutes more.
- In a large bowl, beat the cream cheese until soft and creamy. Gradually add 1 cup sugar and beat until light and fluffy.
- Add the eggs one at a time, beating well after each. Add 1 1/2 tsp vanilla.
- Spoon the mixture into paper cupcake liners, filling each 3/4 full.
- Bake at 300 degrees for 30 minutes.
- Combine the sour cream with 1/4 cup sugar and 1/2 tsp vanilla, stirring well.
- Spoon 1/4 tsp of the sour cream mixture on each cupcake and add strawberry preserves. Bake 5 minutes more.
