Upside Down Cake

A classic upside-down cake with a butter and brown sugar fruit layer baked beneath a tender cake batter, then inverted so the fruit sits on top.

Directions

  1. Heat oven to 350 degrees. Sift flour, sugar, baking powder, and salt into bowl. Add shortening, milk, and flavoring. Beat 2 minutes on medium speed of mixer. Scrape sides and bottom of bowl constantly. Add eggs. Beat 2 more minutes. Melt butter in square pan, mix in brown sugar. Arrange fruit on top. Pour cake batter over fruit. Bake 40 to 45 minutes. Invert at once on serving plate. Leave pan over cake for a minute.

  4. Add the egg. Beat 2 more minutes.
  5. Melt the butter in a square pan; mix in the brown sugar. Arrange the fruit on top.
  6. Pour the cake batter over the fruit. Bake 40 to 45 minutes.
  7. Invert at once onto a serving plate. Leave the pan over the cake for a minute.
