Roast Potatoes (Swedish Style)

A Swedish-style roast potato in which whole peeled potatoes are sliced almost all the way through, basted with butter, and baked with bread crumbs and parmesan cheese until golden brown.

Directions

  1. Peel potatoes, put in cold water to prevent discoloring. Put one potato at a time in spoon and slice done to edge of spoon 1/8 thick. Spoon stops them from slicing through.
  2. Put potatoes in baking dish cut side up, baste with butter, sprinkle with salt. Cook 30 minutes at 425 degrees. Sprinkle crumbs over each potato. Cook 15 minutes or until golden brown. Add cheese 5 minutes before done.

  2. Put one potato at a time in a spoon and slice down to the edge of the spoon, 1/8 inch thick (the spoon stops the knife from slicing all the way through).
  3. Put the potatoes in a baking dish cut side up, baste with the melted butter, and sprinkle with the salt.
  4. Cook 30 minutes at 425 degrees.
  5. Sprinkle the bread crumbs over each potato. Cook 15 minutes, or until golden brown.
  6. Add the parmesan cheese 5 minutes before done.
