Ricotta Cheese Filling

A sweet ricotta filling blended smooth with confectioners sugar, dry whipped topping mix, and extract or liqueur; optional dried fruit, nuts, or chocolate chips can be stirred in.
Directions
- Process cheese in blender till smooth. Place in bowl add dry whipped mix and sugar and extract (liqueur) beat with mixer till smooth and well blended. Can add dry fruit, nuts, chocolate chips, etc
- Process the 16 ounces ricotta cheese in a blender until smooth.
- Place in a bowl and add the envelope of dry non-dairy whipped topping mix, the 1/3 cup confectioners sugar, and the 1 teaspoon extract (or liqueur). Beat with a mixer until smooth and well blended.
- If desired, add dried fruit, nuts, chocolate chips, etc.
