Green Beans with Feta

A warm skillet side of green beans cooked with garlic, Italian seasoning, and plum tomatoes, then topped with crumbled Feta cheese and toasted pine nuts.
Directions
- Press beans between paper towels to remove excess moisture.
- In a large nonstick skillet, heat oil until hot. Cook garlic and Italian seasoning over medium heat 1 minute; add green beans and cook 5-7 minutes. Stir in tomatoes and cook, stirring constantly, 2 minutes or until thoroughly heated. Stir in lemon juice, salt and pepper. Sprinkle with cheese and pine nuts.
- Toast pine nuts in a 350 degree oven for 6-8 minutes.
- Toast the pine nuts in a 350°F oven for 6-8 minutes.
- Press the thawed, drained green beans between paper towels to remove excess moisture.
- In a large nonstick skillet, heat the olive oil until hot. Cook the garlic and Italian seasoning over medium heat for 1 minute.
- Add the green beans and cook for 5-7 minutes.
- Stir in the chopped plum tomatoes and cook, stirring constantly, for 2 minutes or until thoroughly heated.
- Stir in the lemon juice, salt, and pepper.
- Sprinkle with the crumbled Feta cheese and toasted pine nuts.
