Green Beans with Feta

A warm skillet side of green beans cooked with garlic, Italian seasoning, and plum tomatoes, then topped with crumbled Feta cheese and toasted pine nuts.

Directions

  1. Press beans between paper towels to remove excess moisture.
  2. In a large nonstick skillet, heat oil until hot. Cook garlic and Italian seasoning over medium heat 1 minute; add green beans and cook 5-7 minutes. Stir in tomatoes and cook, stirring constantly, 2 minutes or until thoroughly heated. Stir in lemon juice, salt and pepper. Sprinkle with cheese and pine nuts.
  3. Toast pine nuts in a 350 degree oven for 6-8 minutes.

  3. In a large nonstick skillet, heat the olive oil until hot. Cook the garlic and Italian seasoning over medium heat for 1 minute.
  4. Add the green beans and cook for 5-7 minutes.
  5. Stir in the chopped plum tomatoes and cook, stirring constantly, for 2 minutes or until thoroughly heated.
  6. Stir in the lemon juice, salt, and pepper.
  7. Sprinkle with the crumbled Feta cheese and toasted pine nuts.
