Creole Rice

A Creole-style rice simmered in tomato sauce with onion, garlic, red bell pepper, and seasonings of oregano, thyme, cayenne, and bay leaves.

Directions

  1. In a medium saucepan with cover, heat oil over medium high heat. Add onion and garlic. Saute for 4 to 5 minutes. Stir in bell pepper, oregano, salt, thyme, and cayenne. Cook for 1 minute. Add bay leaves, tomato sauce and water; bring to a boil. Stir in rice, cover and reduce heat to low. Cook for 20 minutes or until rice is tender and liquid is absorbed. Let stand covered for 5 minutes. Remove bay leaves.

  2. Stir in the bell pepper, oregano, salt, thyme, and cayenne. Cook for 1 minute.
  3. Add the bay leaves, tomato sauce, and water; bring to a boil.
  4. Stir in the rice, cover, and reduce heat to low. Cook for 20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Let stand, covered, for 5 minutes. Remove the bay leaves.
