Barbecue Beef Roast

An eye round roast rubbed with seasonings, then baked slowly in a homemade tomato barbecue sauce and served thinly sliced with the remaining sauce.

Directions

  1. Rub roast on all sided with salt and pepper, garlic salt and tenderizer. Put roast in baking pan. 13 x 9 x 2.
  2. Combine next 9 ingredients in saucepan, bring to boil, reduce heat and simmer 15 minutes. Stir in butter and BBQ sauce into liquid.
  3. Pour half of the sauce over roast and bake at 300 degrees for 2 1/2 hours. Basting frequently. Thinly slice roast and serve with remaining sauce.

  2. Put the roast in a 13 x 9 x 2 inch baking pan.
  3. Combine the next 9 ingredients (water, chopped tomatoes, vinegar, catsup, chopped onions, garlic, celery, Worcestershire sauce, and lemon juice) in a saucepan. Bring to a boil, then reduce heat and simmer 15 minutes.
  4. Stir the margarine and commercial BBQ sauce into the liquid.
  5. Pour half of the sauce over the roast and bake at 300 degrees for 2 1/2 hours, basting frequently.
  6. Thinly slice the roast and serve with the remaining sauce.
