Spicy Marinated Eye Round

An eye round roast baked with onions, then thinly sliced, chilled in a spicy ketchup-based sauce, and baked again.

Directions

  1. Place roast in pan, add onions, salt and pepper. Bake covered at 325 degrees for 3 hours and 30 minutes. Cool and slice thinly.
  2. Place roast in casserole dish, add spicy sauce, cover and chill for 8 hours. When ready remove from fridge and let stand for 30 minutes. Bake at 350 degrees for 45 minutes.
  3. SPICY SAUCE
  4. Bring all ingredients to a boil, reduce heat and simmer 1 hour. Remove Bay leaf.

Prepare the Spicy Sauce: bring all the sauce ingredients (ketchup, water, sliced onions, wine vinegar, brown sugar, Worcestershire sauce, dry mustard, oregano, pepper, garlic powder, chili powder, ground cloves, ground nutmeg, Tabasco, and bay leaf) to a boil, then reduce the heat and simmer 1 hour. Remove the bay leaf.
  2. Place the roast in a pan; add the sliced onions, salt, and pepper. Bake, covered, at 325 degrees for 3 hours and 30 minutes.
  3. Cool the roast and slice it thinly.
  4. Place the sliced roast in a casserole dish, add the spicy sauce, cover, and chill for 8 hours.
  5. When ready, remove from the refrigerator and let stand for 30 minutes.
  6. Bake at 350 degrees for 45 minutes.
