Veal (or Chicken) Spaghetti

Serves 4 but may be increased to

Veal (or Chicken) Spaghetti

Veal (or chicken) cutlet pieces browned and simmered with green peppers, tomatoes, mushrooms, garlic, and red wine, served over spaghetti.

Directions

  1. Saute in oil, the green pepper till tender, remove from pan. Season veal (or chicken) with salt/pepper, cook over medium heat until lightly brown. Add green pepper and remaining ingredients. Simmer uncovered one hour til meat is tender. Serve over spaghetti. Add more tomatoes or water to increase sauce. I enjoy adding onions also. Wine can be eliminated. Serves 4 but may be increased to serve more.
  1. Saute the green pepper strips in the oil until tender; remove from the pan.
  2. Season the veal (or chicken) with salt and pepper; cook over medium heat until lightly browned.
  3. Add the green pepper and the remaining ingredients (tomatoes, mushrooms, garlic, red wine, oregano, and basil to taste).
  4. Simmer uncovered one hour, until the meat is tender.
  5. Serve over the cooked spaghetti. Add more tomatoes or water to increase the sauce.
  6. Note (from the cook): Onions may be added as well, and the wine can be eliminated. Serves 4 but may be increased to serve more.
