Stuffed Lobster Supreme

Boiled lobster tail meat folded into a rich cream sauce seasoned with paprika, cayenne, and lemon juice, spooned back into the shells, topped with cracker crumbs and cheese, and baked.

Directions

  1. Cook lobster tails in boiling salted water until done. Drain, and with scissors cut bottom of shell to remove meat nd save the shell to stuff. Cut meat into dice chunks.
  2. Saute lobster mea in butter in large frying pan 2 to 3 minutes, remove from heat, blend in flour, salt, paprika, slowly stir in cream, cook stirring constantly until mixture thickens and boils 1 minute, stir in lemon juice.
  3. Spoon filling into shells, sprinkle tops lightly with cracker crumbs, add melted butter. Bake at 450 degrees about 12 minutes.
