Nana's Prune Cake
A spiced prune Bundt cake made with corn oil and buttermilk, soaked after baking with a warm buttermilk and corn syrup glaze that seeps into the cake.
Directions
- Stir together flour, salt, baking soda and spices. Set aside. In a large mixing bowl beat together the corn oil and sugar, add eggs, one at time beating well after each addition, stir in vanilla. Add sifted dry ingredients alternately with buttermilk about 1/3 at a time, blending well after each addition, stir in prunes and nuts. Pour into greased and floured tube or bundt pan. Bake in oven at 350 degrees until cake tester comes out clean, about and hour. About 15 minutes before cake is done start preparing glaze.
- GLAZE
- In a 3 quart sauce pan put all ingredients in and cook up to a boil for 10 minutes. Stirring occasionally. When the cake is done and removed from oven . . pour warm glaze over the cake in the pan allow to soak into cake and cool completely before removing from pan.
- Stir together the flour, salt, baking soda, and spices (cinnamon, nutmeg, allspice). Set aside.
- In a large mixing bowl, beat together the corn oil and sugar.
- Add the eggs one at a time, beating well after each addition, then stir in the vanilla.
- Add the sifted dry ingredients alternately with the buttermilk, about 1/3 at a time, blending well after each addition.
- Stir in the prunes and nuts.
- Pour into a greased and floured tube or Bundt pan.
- Bake at 350 degrees until a cake tester comes out clean, about an hour.

- Make the glaze: in a 3-quart saucepan, put in all the glaze ingredients (sugar, buttermilk, butter, corn syrup, baking soda, and vanilla) and cook up to a boil for 10 minutes, stirring occasionally.
- When the cake is done and removed from the oven, pour the warm glaze over the cake in the pan. Allow it to soak into the cake and cool completely before removing it from the pan.
