Miniature Coffee Cakes

Small sour cream coffee cakes baked in muffin tins, studded with optional raisins and finished with a brown sugar and chopped nut topping.

Directions

  1. Mix dry ingredients together. Cream butter and add sugar gradually. Beat till fluffy. Add egg and vanilla, beat well. Ads sour cream and flour alternately. Stir in raisins (?). Fill muffin tins (greased) 2/3 full. Add topping. Bake at 425 degrees 15-20 minutes.
  2. For topping add all topping ingredients together sprinkle on top, and bake.
  1. Mix the dry ingredients (baking powder, baking soda, and salt) together.
  2. In a separate bowl, cream the butter and add the sugar gradually. Beat until fluffy.
  3. Add the egg and vanilla; beat well.
  4. Add the sour cream and flour alternately.
  5. Stir in the raisins (optional).
  6. Make the topping: combine the brown sugar, granulated sugar, and chopped nuts.
  7. Fill greased muffin tins 2/3 full, then sprinkle the topping over each.
  8. Bake at 425 degrees for 15 to 20 minutes.
