Impossible Spinach Pie

Serves 6

A crustless spinach pie made with Swiss cheese and onion bound in a Bisquick, egg, and milk batter that forms its own crust as it bakes.

Directions

  1. Heat oven to 400 degrees. Grease 10 inch pie plate. Mix spinach, cheese and onion in plate. Beat remaining ingredients until smooth, 15 seconds in blender on high or 1 minute with hand beater. Pour into plate. Bake until knife inserted in center comes out clean, about 30 minutes. cool 5 minutes. Serves 6

  2. Mix the spinach, shredded Swiss cheese, and chopped onion in the pie plate.
  3. Beat the remaining ingredients (the milk, eggs, Bisquick baking mix, salt, pepper, and ground nutmeg) until smooth — 15 seconds in a blender on high or 1 minute with a hand beater.
  4. Pour the batter into the plate.
  5. Bake until a knife inserted in the center comes out clean, about 30 minutes.
  6. Cool 5 minutes. Serves 6.
