Impossible Spinach Pie
Serves 6
A crustless spinach pie made with Swiss cheese and onion bound in a Bisquick, egg, and milk batter that forms its own crust as it bakes.
Directions
- Heat oven to 400 degrees. Grease 10 inch pie plate. Mix spinach, cheese and onion in plate. Beat remaining ingredients until smooth, 15 seconds in blender on high or 1 minute with hand beater. Pour into plate. Bake until knife inserted in center comes out clean, about 30 minutes. cool 5 minutes. Serves 6

- Mix the spinach, shredded Swiss cheese, and chopped onion in the pie plate.
- Beat the remaining ingredients (the milk, eggs, Bisquick baking mix, salt, pepper, and ground nutmeg) until smooth — 15 seconds in a blender on high or 1 minute with a hand beater.
- Pour the batter into the plate.
- Bake until a knife inserted in the center comes out clean, about 30 minutes.
- Cool 5 minutes. Serves 6.
