Golden Squash Bake

A simple baked side of yellow squash cubes tossed with onion, garlic, and olive oil, roasted until tender and finished with slivered fresh basil.

Directions

  1. Preheat oven to 350 degrees.
  2. Cut the squash into 1 inch cubes and place in a large bowl, Toss with the onions,garlic, coarse salt and pepper and 1/4 cup olive oil
  3. Place the vegetables in a shallow baking pan to fit and bake until tender, tossing once or twice, about 1 1/4 hours. Transfer the mixture to a bowl, season generously with more salt and pepper, and drizzle with extra olive oil, if you like. toss with basil and serve immediately. Serve 4 to 6

  3. Spread the vegetables in a shallow baking pan sized to fit them. Bake until tender, tossing once or twice, about 1 1/4 hours.
  4. Transfer the mixture to a bowl and season generously with more salt and pepper. Drizzle with extra olive oil, if you like.
  5. Toss with the slivered fresh basil leaves and serve immediately. Serves 4 to 6.
