Golden Squash Bake
A simple baked side of yellow squash cubes tossed with onion, garlic, and olive oil, roasted until tender and finished with slivered fresh basil.
Directions
- Preheat oven to 350 degrees.
- Cut the squash into 1 inch cubes and place in a large bowl, Toss with the onions,garlic, coarse salt and pepper and 1/4 cup olive oil
- Place the vegetables in a shallow baking pan to fit and bake until tender, tossing once or twice, about 1 1/4 hours. Transfer the mixture to a bowl, season generously with more salt and pepper, and drizzle with extra olive oil, if you like. toss with basil and serve immediately. Serve 4 to 6

- Transfer the mixture to a bowl and season generously with more salt and pepper. Drizzle with extra olive oil, if you like.
- Toss with the slivered fresh basil leaves and serve immediately. Serves 4 to 6.
