Rocky Road Frosting

A chocolate frosting studded with tiny marshmallows and chopped nuts, enough to frost two 8-inch cake layers.

Directions

  1. In a small saucepan place chocolate, 1 cup marshmallows, water and butter. Heat over low heat, stirring until blended. Cool slightly. Add sugar and vanilla, beat until smooth and slightly thick. Stir in reserved marshmallows and nuts. Frost 2 8 inch layers.
  1. In a small saucepan, place the 2 squares (1 ounce each) unsweetened chocolate, 1 cup of the tiny marshmallows, the 1/4 cup water, and the 1/4 cup butter (reserve the remaining 1 cup marshmallows).
  2. Heat over low heat, stirring, until blended. Cool slightly.
  3. Add the 2 cups sifted confectioners sugar and the 1 teaspoon vanilla; beat until smooth and slightly thick.
  4. Stir in the reserved 1 cup marshmallows and the 1/2 cup chopped nuts.
  5. Frost two 8-inch layers.
