Greens with Bacon Dressing
Makes 6 servings

A green salad of spinach, romaine, and lettuce with green onions and green pepper, dressed with a warm bacon dressing made from the bacon drippings, brown sugar, and red wine vinegar, and garnished with bacon and hard-cooked eggs.
Directions
- Place greens in a salad bowl. Add onions and green pepper. Cut bacon into small pieces and fry bacon until crisp. Remove from pan and drain on paper towels.
- Le bacon fat cool slightly. Add brown sugar and stir well. Add vinegar, Worcestershire, lemon juice and garlic salt. Stir and pour over the greens. Toss gently. Garnish with bacon pieces and hard cooked eggs. Makes 6 servings.
