Crepes

Thin, blender-made crepes from a batter of egg, egg yolk, sugar, flour, milk, and melted butter, cooked on a lightly oiled skillet or crepe pan.

Directions

  1. To MAKE CREPE BATTER: With and electric blender mix at medium speed, beat together the egg, egg yolk, sugar, flour and 1/4 cup milk, until the mixture is well blended. Beat in the melted butter and remaining milk to form a smooth batter. Refrigerate for at least 30 minutes. TO COOK CREPES: Drop spoonfuls of batter on a lightly oiled skillet or crepe pan and quickly spread batter from the center in a circular fashion, using the underside of the spoon. cook until the bottom side of crepes area golden brown. Carefully turn them over to lightly brown the other side. Remove the crepes from the pan, stacking them on a plate, place them in oven to keep warm til time to serve.

  3. Refrigerate for at least 30 minutes.
  4. To cook the crepes: Drop spoonfuls of batter onto a lightly oiled skillet or crepe pan and quickly spread the batter from the center in a circular fashion, using the underside of the spoon.
  5. Cook until the bottom side of the crepe is golden brown, then carefully turn it over to lightly brown the other side.
  6. Remove the crepes from the pan, stacking them on a plate, and place them in the oven to keep warm until time to serve.
